There is a popular claim that naturally occurring foods are either rich in sugar or rich in fat, but almost never both, with human breast milk supposedly being the only exception. There is a grain of truth behind the observation that extremely concentrated combinations of fat and sugar are uncommon in unprocessed foods, but the absolute claim is incorrect. Several natural foods contain both meaningful amounts of fat and naturally occurring sugars, although few combine them at the concentrations commonly found in desserts and other highly processed foods.
Is It True That Natural Foods Are Either Sweet or Fatty?
The idea works reasonably well as a description of many familiar whole foods. Ripe fruit tends to obtain much of its energy from carbohydrates, including natural sugars, while foods such as nuts, seeds, olives, and avocados obtain substantially more energy from fat. Lean and fatty meats contain little or no sugar.
That pattern does not create a strict biological rule, however. Plants do not organize themselves according to modern nutritional categories, and individual fruits and seeds can contain mixtures of carbohydrate, fat, protein, fiber, and water. The more accurate observation is that whole foods containing simultaneously very high concentrations of both sugar and fat are relatively unusual, not nonexistent.
The distinction between "contains both fat and sugar" and "is simultaneously very high in fat and sugar" is important. A food can satisfy the first definition without remotely resembling the nutrient concentration of ice cream, chocolate, pastries, or other formulated foods.
Natural Foods That Contain Both Sugar and Fat
Coconut and durian are two particularly useful counterexamples. Other foods may taste slightly sweet while containing considerable fat, or they may contain abundant carbohydrate while retaining a smaller amount of fat. The exact numbers vary with variety, ripeness, growing conditions, and the nutritional database being used.
